A quick and easy Greek-inspired sheet pan dinner featuring premade chicken meatballs, fingerling potatoes, cherry tomatoes, red onion, and feta cheese, perfect for weeknights.
Preheat the oven to 425°F and line a large sheet pan with parchment paper or foil.
Toss the halved potatoes with olive oil, oregano, garlic powder, salt, pepper, and lemon juice. Spread them evenly on the pan, cut side down.
Roast the potatoes for 20 minutes until they begin to brown and soften.
Remove the pan from the oven and add the red onion wedges, cherry tomatoes, and meatballs. Drizzle lightly with olive oil and toss everything together.
Roast for another 15 to 20 minutes, until the meatballs are heated through.
Scatter feta over the top and return to the oven for 5 more minutes.
