Casserole season! JK it’s still 80 degrees in New York HOWEVER fall is right around the corner and yes, I have felt a chill in the air at night 🍂 Save this recipe for loaded baked potato cazzzy for when you’re feeling like something cozy this fall.
Bake potatoes for 1 hour at 350° until tender. When the potatoes are no longer piping hot, cut them in half lengthwise and remove potato pulp to a medium size bowl. Grease a baking dish with butter and place the saved potato skins on bottom. Set aside. In the bowl with the potato pulp, add the milk and butter, and mash. Add salt and pepper to taste and more milk if needed. Add 2/3 of the grated cheese, bacon bits and veggies if using. Add the potato pulp mixture over the potato skins in the baking dish; smooth until even and top with the remaining cheese. Bake for 45 minutes.
