Add this Mom-approved Stuffed Pepper Casserole to your weeknight dinner rotation! My sister (mother of 2) loves this recipe. It’s perfect for the fall, so cozy, and makes delicious leftovers.
Preheat oven to 375°F and prepare a 9x13-inch casserole dish. Cook the ground turkey (or meat of choice) in a skillet. Add the diced onion, chopped bell peppers, and minced garlic to the skillet and cook until softened. Stir in the Italian seasoning, salt, and pepper to taste. Add the can of diced tomatoes to the mixture. Transfer the entire mixture to the 9x13 casserole dish. Add the uncooked rice and broth to the casserole dish and mix everything together. Cover the dish with foil and bake for 45 minutes to 1 hour, or until the rice is tender. Remove the foil, top the casserole with shredded cheese, and broil until the cheese is bubbly and melted.
