Inspired by the famous Rainforest Muffins at Café Karma Sutra from the book "Eliza Starts a Rumor," this recipe creates a wicked combination of a cinnamon muffin with a creamy peanut butter swirl, topped off with crunchy sweet granola.
Preheat oven to 375 degrees. Mix wet ingredients (milk, coconut oil, egg) in one bowl, mix dry ingredients (flour, 1/2 c sugar, 2 tsp baking powder, 1/2 tsp cinnamon, 1/4 tsp salt) in another. Combine both the wet & dry into the larger bowl. Do not over-mix!
Pour batter into a greased muffin tin pan with paper-liners (grease helps the tops from sticking when they spill over).
Heat 1/2 cup peanut butter in the microwave for 20-30 seconds. Spoon melted PB into each portion of batter. Take a toothpick and swirl it in.
Combine the topping ingredients (1/3 cup granola, 1 tbs sugar, 1/2 tsp cinnamon) and set aside.
Bake for 5 minutes.
After 5 minutes, sprinkle on the crunchy topping and bake for another 7-10 minutes (until the muffins are firm). Enjoy with coffee or tea!
