1. Bake sweet potatoes until they are fork tender (approximately 45-60 minutes at 400°F/200°C).
2. Once cooked and cooled slightly, carefully remove the inside flesh of the potatoes, leaving a sturdy skin.
3. In a bowl, mix the scooped-out potato flesh with cooked ground beef, spicy taco seasoning, and black beans.
4. Stuff the meat and potato mixture back into the empty sweet potato skins.
